South of Domodossola there are really two lines, one going to Milan (the main line) and another going to Novara (local service plus some interesting international freight). They come together in only one station, Premosello. They are also very close in Vogogna (but not exactly the same station, you have to cross a street) and Cuzzago (same, I believe). You can go to YouTube and enter the names of each of those three towns, and you'll see videos of train traffic taken from each of those stations.
I'm not familiar with the details of the lines North of Vogogna, but I believe that Domodossola itself must be an interesting location. Maybe some more knowledgeable forum members will chime in. The huge Domo 2 freight yard must also be interesting, but I don't know where a good photo location could be. You could start by googling "scalo merci Domo II" and take it from there. Domo 2 has multiple tracks with both systems, the Italian 3kV DC system and the Swiss one (15kV AC? 25kV? I forgot...)
The entire valley is gorgeous, so worry about a good rail location, everything else is going to be beautiful anyway.
